I just finished a web site and photography project for Alex Whitmore’s Taza Chocolate company:

Taza’s hot chocolate is the real thing. Alex has designed a few golden formulas for densely layered, single-origin hot chocolate that will rock your socks. The legend is that he channeled Barry Callebaut and Aztec Emporer Moctezuma, and he persuaded them to part with their secret chocolate knowledge. In return, he made two cups of hot chocolate, one French, one Mexican, that brought these two chocolate mavens back from the grave. The Emporer now walks the streets of Oxaca, drinking chocolate at stalls and cafés while he waits for someone to recognize him. Barry lives in Queens.

On a hot grill, blacken two or three eggplants on all sides. They’ll come out like this:

When cool, slice them in half and scoop out the pulp. Strain it to get rid of the bitter juices, then put it in a bowl. Add a few dollops of dairy: yogurt, sour cream, and/or pickled lebna. Add lemon juice, a dash of paprika, salt, pepper, and a big spoonful of tahini. Keep tasting. Top with pomegranate seeds and olive oil:
